1 cup Toor dal (pigeon peas) 1 cup mixed vegetables (carrots, beans, potatoes, drumsticks, etc.) 1 onion, finely chopped 2 tomatoes, chopped 2 green chilies, slit 1/2 cup tamarind extract 1 teaspoon mustard seeds 1 teaspoon cumin seeds A pinch of asafoetida (hing) 1/2 teaspoon turmeric powder 1 tablespoon sambar powder A few curry leaves 2 tablespoons oil Salt to taste
Instructions
Follow these steps to make delicious Idli Sambar:
1. Soak the idli rice and urad dal separately for 4-6 hours.
2. Grind the soaked ingredients to a smooth batter and let it ferment overnight.
3.Grease the idli molds and pour the batter into each mold. Steam the idlis for about 10-12 minutes or until a toothpick inserted comes out clean.
Sambar
Here's how to prepare the flavorful Sambar:
1. Cook toor dal until soft and mashable.
2. Sauté onions, add tomatoes, and spices to make the sambar base.
3.Add chopped tomatoes, green chilies, and curry leaves. Cook until tomatoes are soft. Add the mixed vegetables, turmeric powder, and salt. Cook for a few minutes.
4.Pour in water and let it simmer until the vegetables are cooked. Add the cooked toor dal and adjust the consistency by adding more water if needed.
